The kids are going back to school and I think it’s all the brain power they’re suddenly using that makes them so hungry, because they come back famished those first few days. I’m constantly telling my kids to stay out of the cupboards and out of the pantry so they don’t spoil their dinner appetite.
I ended up making something for dinner I knew would satisfy their hunger and please their taste buds, and they loved it so much I had to share. You’ll want to serve up a big, leafy green salad with this pile of carb-filled, cheesy goodness…
Pizza Pasta Casserole (oh my GOODNESS ... so delicious!)
½ pound elbow macaroni, cooked
~ 1 cup fresh mozzarella cheese, shredded
~ 2 jars pizza sauce
~ ½ cup parmesan cheese, grated
~ Favorite pizza toppings such as spicy sausage, pepperoni, Canadian bacon, black olives and diced green peppers.
In a bowl, mix cooked macaroni, pizza sauce, pizza toppings. Combine. Pour half of the pasta mixture into a baking dish and top with mozzarella. Cover with remaining pasta mixture, top with more cheese and fresh parmesan. Bake covered at 330 until bubbly. Uncover and bake until top is golden.
